Sodium gluconate is the sodium salt of gluconic acid. It occurs as white or pale yellow crystalline granules or powder, freely soluble in water, slightly soluble in alcohol, and insoluble in ether. Sodium gluconate is a retarding water reducer, powder, and low-air-entraining agent, and a natural anionic surfactant for high molecular weight polymers.
